How To Make 3-Seed Organic Oat Bread

Have you been looking for an oat bread with a lot of texture and delicious seeds? If you're struggling to find this type of bread at a local bakery, consider making your own! This recipe calls for organic ingredients, and it results in a loaf with a soft oat texture, but also plenty of nuttiness from three kinds of seeds.

You'll need the following ingredients:

  • 2 cups organic bread flour
  • 2 cups organic oat flour
  • 2 tablespoons organic, extra-virgin olive oil
  • 1 teaspoon salt
  • 2 tablespoons organic, raw honey
  • 1 packet active, dry yeast
  • 1 1/4 cups warm water
  • 2 tablespoons organic flax seeds
  • 1/4 cup organic sunflower seeds
  • 2 tablespoons organic sesame seeds
  • 1 egg white, whisked

Combine the water, yeast, and sugar in the bowl of your electric mixer. Let this mixture rest for about 5 minutes, during which time it should become foamy and frothy. When this change occurs, add the bread flour to the bowl, and stir gently to combine. Then, add 1 cup of the oat flour, along with the salt and oil. Stir until the flour has been incorporated.

Pour the rest of the oat flour onto a wooden board, and then place your dough on top of it. Knead the flour into the dough over a period of about 10 minutes. The dough should slowly take up the flour, resulting in a non-sticky dough with a smooth, elastic structure. When you achieve this texture, add the sunflower seeds and knead until they are evenly distributed.

Place the dough in a gently oiled bowl, and cover it to rise for 2 hours. (This dough takes longer to rise than standard bread dough due to the incorporation of the oat flour.)

When the dough has risen, punch it down, and then shape it into a loaf. Brush the top of the loaf with the whisked egg whites, and then sprinkle on the sesame seeds and flax seeds. Let the loaf rise for about 40 minutes, or until it has approximately doubled in size. Meanwhile, work on preheating the oven to 375 degrees F.

Place the risen loaf in your oven, and bake at 375 degrees F for about 45 to 50 minutes. Use a thermometer to check the temperature of the bread. It should be at 190 degrees F when finished. Remove from the oven, and allow the loaf to bread to cool on the pan for 30 minutes before removing it to finish cooling on a wire rack.
